Teriyaki [tehr-ee-YAK-kee] is a Japanese dish consisting of meat, that has been marinated in a mixture of soy sauce, Japanese wine, sugar, and ginger. The recipe calls for «mirin», a sweet wine made from rice, which gives the cooked food a sweet flavour and a slight glaze. Mirin can be found in Asian food markets. If you cannot find it, you may replace it with «sake», sherry or a sweet white wine.
Keep the serving plates in the oven at the lowest setting so they are warm when you serve.

This recipe is totally delicious. I used sherry and I broiled the pork chops 10 min on each side. I did not reduce the marinade but thickened it up with a tsp of corn starch before heating to a boil. I only put about a tbsp of the sauce on top of the chop. I did not find the sauce salty.
I didn't really find this THAT salty, but I didn't really reduce the marinade and used it very sparingly. I also may not have marinated the meat as long, maybe only an hour and a half. MMMM gingerrrrr....
Meat was good, but found it a little salty when I poured the marinade overtop. I'll probably try it with a little more sugar next time...

Not bad - partner found it extremely salty, despite using low sodium soy sauce. I don't think I would make it again.

Followed recipe exactly while using sherry. Wonderful flavor especially with the marinade sauce poured over the chops. Had it with white rice - sauce went very well with it. Highly recommended!
